Flying Trapeze Kitchen: Quinoa Fried Eggs

Here’s my favorite breakfast of late. The recipe is for one, but it’s obviously easy to make for more.

Ingredients:
¼ - 1/3 cup plain, cooked quinoa
1 whole egg
1 egg white
Chopped jarred roasted red peppers
Garlic salt
Pepper
1 tbsp of your favorite cheese, grated or crumbled
Fresh chives or basil (optional)

Directions:
Lightly coat a frying pan with olive oil or cooking spray and set to high heat.

Place your quinoa in a mound on the pan and flatten slightly, so it’s about the circumference of a fried egg.

Crack your egg into the center. Use the extra egg white to make sure the quinoa is covered with egg.

Lightly salt and pepper, then sprinkle the chopped red pepper evenly on top.

Cook on high until partially set, then reduce heat to low. Pierce egg yolk and spread it around a bit. (If you want to.)

Cook according to how you like your fried eggs, either leaving them a bit running or cooking them solid.

Use a spatula to shift the egg to a plate. If you’ve done it right, the quinoa should be nice and crispy on the bottom.

Garnish with the fresh chives or basil if you’ve got them, and serve.

    This recipe sounds great! I love quinoa and it’s always nice to find a new way to use it.

    Quinoa is hard to find here (Switzerland), but after reading your recipe my motivation is renewed!
