10 Minute Gourmet: Thin-Crust “Skinny” Pizza

December is the month where my home-cooking goes in the toilet and I need fast foods that I can nevertheless make at home. Here’s one of my favorite quick dinners that’s relatively healthy but tastes like yummy junkfood — just what you need after stressful shopping excursions or long days at the keyboard.

THIN-CRUST TORTILLA PIZZA

I use Mission’s Carb Balance White Tortillas - 80 calories each and plenty of protein and fiber. Top with a thin coat of your favorite tomato sauce, a light layer of part-skim mozz and a sprinkle of good, fresh parmesan. Then dress it up with toppings.

My favorites:
– Fresh basil and sliced cherry tomatoes
–Canadian bacon and pineapple
–Sauteed mushrooms and red onion
–Olives, capers, and pine nuts

Bake on foiled pan (if you’re lazy like me and don’t want to clean) at 450-475 degrees until tortilla edges and cheese are browned and bubbly. (Approximately 8 minutes.) Don’t take out too early, or your pizza won’t be crisp enough. Also, don’t you just love it when the cheese gets slightly chewy-crispy edges?

If you allow your pizza to cool for 2-3 minutes, it should be crisp enough to stay flat when lifted - and it won’t burn your mouth!

    I like to use whole wheat pita bread. Probably a few more calories, but I like a bit more crust. Either way - a tasty treat for the pizza loving dieter!

    Sounds wonderfully delic! I also use 1 pt Joseph’s whole grain w oatbran and flaxseed for the same sort of meal! Add a big salad, and you are eating Italian gourmet!

    Mmmm…I’ve always done pizzas on Thomas Lights, but might need to switch to these instead!!

    I’ve done the pita before, but this crust comes out far crispier, more pizza-like. Really, it doesn’t taste to me like “diet” replacement food, just a nice super-thin crust. I was shocked by how good it is!

    Melissa, we always had english muffin pizzas as kids. Love them!
