
This recipe is the best dish I’ve made in a long while. It’s so good I want to climb to the highest peak in the land with a giant megaphone and tell the world! But it’s Sunday morning and I’m in my bathrobe and the blog will have to do.
A few notes: I’m posting my picture because it came out so visually different from Heidi’s rendition of the recipe. This is because I neglected to raise the oven temp during the final 15 min of cooking; next time I’ll try it that way but it’s hard to imagine an improvement over what I ate last night. Also, I used fresh cranberries as indicated (Heidi used dry), so the amount of liquid called for (1/2 cup stock, 1/2 cup cream) worked perfectly.
My version was with quinoa, butternut squash, fresh sage, and hazelnuts. Yum, yum, yum!! (And gluten-free!) If anyone tries it with straight stock instead of cream, let me know. I’m also sure you could reduce the amount of oil used to toast the grains. But I love olive oil and wanted a hearty dish, so I opted to keep it. YUM!! (Did I say that already?)

Did you change the cooking time or amount of liquid for the quinoa version? I LOVE quinoa, though I should give millet a chance one of these days. I just have a lot of quinoa at present, so it would be good to have a good recipe to use. Also, I’d try all stock instead of adding cream, and could let you know the results! :)

Oops. I didn’t read carefully the first time. I see you added the amount of liquid in the recipe — assume you didn’t add an additional amount later, as Heidi did. I’ll let you know how the full stock version goes!
