Happy Pumpkin Smoothie

Here’s the Happy Pumpkin Smoothie, delivering a nice dose of vitamains A,C, E, and B6, along with potassium, manganese, copper, magnesium, phosphorus, iron, folate, niacin, thiamin and pantothenic acid. You’re the happy one!

HAPPY PUMPKIN SMOOTHIE:
Blend 1/2 apple, 1/2 banana, 1/2 cup pumpkin, 1 cup water or milk, 6 ice cubes, a heavy sprinkle of cinnamon or pumpkin pie spice, and either 1 scoop protein powder or 3 oz. silken tofu (both optional).

This smoothie is very lightly sweet. If you want something more desert-like, just add more banana or something sweet.

Additional note: Smoothie is one of those words that starts to look ridiculous if you think about it too much.

    Cinnamon is also great for balancing blood sugar. I love pumpkin! Never thought to put it in a smoothie. I can’t wait to try it, minus soy products which I don’t like (and who don’t like me ;) ) Will try with yogurt instead.
